My three food guiding lights have been Elizabeth David, Jane Grigson and Joyce Molyneux. I have tried to follow their example of sourcing fantastic ingredients then cooking them simply, with respect for the essential flavours, while also putting my original stamp on many classical dishes and bringing them up to date.
Modern food writers like Diana Henry and Skye Gyngell are also big influences and have steered me to a healthier and lighter way of cooking using gluten-free, or no flour in most of my recipes."
